Please don't tell me you used to weigh 1 dram of cayenne. Anybody with devices to weigh something accurately in such a small quanbreasty is probably a drug dealer. Recipes in my view should always be treated somewhat like HTML; a language of hints. Leave it up to the cook to render as they see fit. My brother-in-law is a chef. He follows recipes. He's pretty much lost without recipes. He can be standing in a pantry full of exciting ingredients awaiting interesting and novel combination and still not be able to figure out what to make or have a feel for what to subsbreastute for a missing recipe ingredient... no cayenne pepper! I'm much more likely to clean out almost the whole pantry (I'll leave the rat contagion for the starving mice) before I launch a raid on the local stupidmarket. I don't label my spice jars... just pop the lid and take a sniff to identify what taste I want in what I'm cooking. The names of spices are pretty vague and like names of people, I have trouble buttociating the name with people-spices I know well. My latest popular invention is hot chocolate with leatherwood honey stirred in.
