Chilling: Just pour a cm or so of N2 on the bottom of a dry chiller box with a spacer or grill so the goods don't come in contact with the N2. Store the beers there for 2-3 minutes. Be careful with condensation, don't let water or beer drip int the cooling liquid.

Ice cream : Normal ice cream recipee, except you can go as low-fat on the milk as you like. (I'll try to dig up the exact recipee).

The clue is this : Enter "room-temperature" ingredients into a large, covered bowl with a lot of agitation. In practice a large Kenwood, largest bowl around 1-4th full, covered with plastic and at full speed. Then pour in the nitrogen in a fluid motion in around 1-2 seconds, and prepare to turn off the mixer fast as it suddenly gets a lot of resistance. The dish is complete when this resistance occurs. If it is not covered, prepare to remove dish from walls and roof.

It is amazingly fast to make. I have friends that make this in around three minutes. Same friends have been known to set off some security alarms when carriyng cannisters of liquid nitrogen on the tube. ("No, it is for food processing" 1).

1 Liquid nitrogen is a low-level hazardous material. There are no specific limitations to ground level transport of smaller quanbreasties, i.e. less than 6 m2 of free gas. You need a security course for gas and cryogenic material handling; any gas blender course is adequate. And "food processing" is a legitmate use!
