It's the same thing. What is the "dollar value" of a bar of gold other than the number of dollars that you would need in order to buy either the gold or the same "real" goods that you could swap the gold for?

Of course the "dollar value" of gold fluctuates with market conditions. So does the "exchange rate" between gold and (say) doughnuts, or (equivalently) between dollars and doughnuts.

What if he's got dollars? buttuming that dollars are worth something (however little), there is going to be some amount of dollars that you will be willing to part with your gold for. Maybe the amount of dollars that you would need to swap with someone else for the same amount of food that you are willing to swap the gold for?

Well, supposing that it does? And suppose that the "stuff" that's needed costs less than the gold would sell for. (Otherwise, the gold would be left in the ground, wouldn't it? -- it would make more sense to sell the "stuff" instead.)

You might want to read up some history here. Consider what happened when "Spanish" (i.e., New World) gold flooded the European economy in the 16th and 17th centuries.

Gold is not exempt from the law of supply and demand.
