You only need one GOOD one.

Unfortunately, none I've ever tried is pro quality. I can't, for instance, use Scribus as a replacement for either InDesign or Quark. Heck, its not as comprehensive as PageMaker 5 and that was TEN years ago! GIMP doesn't support CMYK, can't use that. InkScape is likewise crude and cannot be used in place of Illustrator and OO, while very good, still can't actually replace Word because of its limited graphics support. The problem with this is that there aren't any alternatives to these programs available. If you want to do DTP, Scribus is pretty much it on Linux. You need EPS vector graphics? InkScape is the only game in town. And likewise for GIMP.

What might that profession be and what apps do you find better suited to your profession than those available on either Mac OSX, or even Windows, for that matter?

Open Office or StarOffice is good IMO. In fact, I've started documents on my Windows box here at work, found Word really annoying, and moved over to my Linux box to...
