It's not about the organization, it's about manipulating the objects. If you have two objects on opposite ends of the screen, it takes longer to move from one to the other than it would if both were right next to each other.

Traditional touchscreens do have problems of that sort. Projected ones do not. Even if you need a projection pad to make the images clearly visible, you can simply replace the pad when it gets too dirty to be usable.

Objects don't typically have more than one primary function. Why would you use any concept other than this in the virtual environment, if you were trying to make it object-oriented? Besides, I can think of a number of ways to allow nearly limitless manipulation of objects with just one button. A 'toolchest' method would work well there. Just drag the effect you want to apply to an object onto the object itself. You could even do linking between objects and effects in that manner.
