Most decent CS programs world-wide have been centered around UNIX or a variant since 80s. I've never heard of a single CS program of any sort of decent reputation that focused upon Windows. That's because they will require CS students to understand OS internals, which is basically impossible with windows due to the closed source.

I expect that also to increase as school districts realize they can basically have two computer labs worth of computers for the purchase of a single hardware platform (intel-based macs) and some other software. They already get pretty nice discounts on Windows software as a carrot, so installing dual-boot or parallels on them would be pretty affordable.

No, to be fair, you have to admit that a lot of turnkey point of sale software is focused on Windows. Those vertical market developers aim primarily at the lowest common denominator.
