What does a stage1 install buy for you if there is already a stage3 for your arch? Seriously... Even if you don't like the CFLAGS chosen for you it's a simple matter to change them and then do an emerge -e world to rebuild the entire system. All you essentially do is buy pbutt the bootstrap phase. And of course you can always do emerge -e system && emerge -e system to accomplish pretty much the same thing as the bootstrap. There are reasons they are making the stage3 the official install method... They don't have to maintain documentation on 3 different install methods. Stage1 sometimes would break because of messed up dependencies in portage, causing more support. Then there is the issue of supporting people who don't know what they are doing trying to do a stage1. The stage1 docs are still available - they just aren't supporting the stage1 install process anymore. A stage3 install doesn't install a "one size fits all" system. It simply installs pre-built binaries for the things you would have gotten anyway with a stage1. And even with a stage3 you STILL have to compile your kernel. To my mind, Gentoo hasn't really taken away any of your freedom. They are simply making the install process simpler (though, slightly more time consuming if you want to tune the CFLAGS).
