Here's the simplest way I know of - ignoring all the fancy stuff, and buttuming you have a stand-alone dvd player and a sound card capable of accepting stereo input (most do these days):

Install a copy of audacity, and make sure it will record off your sound mixer. Then, on your dvd, find the portion of audio you want to capture. You may need to search a bit backward and forward to find that point. When you do, search back just a few more seconds - two or three at the most. Then, take the audio plugs from the back of your tv-vcr (they should be red and white) and run them through an adapter if need be into your sound card. When everything is set up to your satisfaction, fire up audacity and start a recording. Then, hit play on your dvd player and watch for the end of the video where the music ends. When you hit that point, stop the dvd then stop audacity. Once that is done, you can edit the little bit off the front and back that you don't want, and then save it in mp3 format (You'll need to set a file path for your lame converter with audacity's preferences and settings).
