...subsequent sessions use -M instead of -Z. The -r and -J are actually options to mkisofs. For CDs, you essentially pipe mkisofs output to cdrecord, like so:

mkisofs -r -Jpath-to-files cdrecord -v dev=-dev-dvdr speed=8 -

DVD+RW media need to be formatted, with dvd+rw-format. CD-R(W) and DVD+R media just have a huge block of 0s on them when you take them off the spindle. You don't generally write to CD-DVD media in the same way as you do with other removable media. This is because of various technical reasons, kernel decisions made a long time ago, and Hysterical Raisins involving Joerg Schilling being crotchety. However, there's a very nice KDE frontend for CD-DVD-writing called k3b.
