Justin At the risk of pointing out the obvious, have you looked in var-log-messages. Lots of stuff is logged in there. If your system crashes and you reboot, the last (large) bunch of lines is the stuff that comes out when the reboot starts. But the lines immediately before that are the crashing system's last ghasp.

Here is what a message file looks like in the vicinity of a crash:

Note: this system did not crash: I rebooted it into Windows XP for a while and then rebooted back to (Red Hat) Linux (9) at this point. If your system crashed, its last few messages would be above. Below is what a boot would look like.
