It seems really unclear what you are trying to accomplish, but I'll make a couple of buttumptions and see if they mesh with what you want---
(1) students simply want to access the net, printers, run OO, etc a print server and router and install OO on the laptops. You could use Linux to build the print server if you want but it is certainly not needed since any $30 or less print server would work fine.
or maybe
(2) you for some reason want them to run Linux apps on their laptops, in which case you have serveral choices:
(a) while connected to your network boot into Linux and only Windows applications. You could dual-boot, boot from cdrom, probably boot from net, and other choices.

(b) install X windows on the laptops and run the Linux apps on a server exported to the laptops. This might require a fairly hefty server if you have lots of simultaneous memory hogs like OO. The advantage here is that the students would still have full access to their normal environment in addition to the Linux stuff.

(c) buy them all copies of VMware so that they can run Linux inside of VMware on their laptops. As with (b) they would be all set to see their normal environment
