Even embedded systems have an ethernet connection. Common single chip processors like the IBM 405 and the Freescale equivalents have an on chip ethernet MAC so it doesn't save than manufaturer anything to not have ethernet. If the board is running an embedded Linux it will almost certainly be able to handle telnet if not something more modern like ssh. Even if the system isn't on a network you could always connect an ethernet cable directly from from a PC or a laptop. If what you are using is an PC like x86 based system then you will not only have an ethernet connection but you will probably have on board graphics so all you would need is a cheap monitor and keyboard. How is a terminal better than a $90 monitor plus a $10 keyboard?
