How many pages are you talking about? Do they need to be scanned in black-and-white, grayscale, or color? Are they typeset text, handwritten text, or what? OCR is impossible on handwritten text, tends to make lots of errors on typeset text if the type is curled or broken, and makes errors anyway if the text is very clean. Also, AFAICT, there is currently no Free OCR engine that's as good as commercial OCR engines were in 2000. You can do the scanning and image-to-PDFing on Linux, but if I were you, I'd do the OCR on 'Doze-OS X, just because the quality will be a lot better. Did you mean "de-skew image if it's a few degrees off from straight horizontal" or "flip image horizontally and vertically if the original was placed into the scanner backwards"? The first is doable, but deskew algorithms tend to miss things if the image is really badly skewed or contains things other than text. The second might be doable, but I really think you'd have better luck paging through the images rapidly with Kuickshow and processing them manually when you find images that were flipped. YMMV though. Don't know. There may be something. There may even be a GIMP plugin, or the xsane people may have put something together.
